Oxidative stress is a biochemistry term almost anyone interested in a healthy lifestyle has heard. It is worth understanding what it actually means before moving on to a conversation about mushrooms and their composition.
What exactly is oxidative stress?
Oxidative stress is a state of imbalance between the production of free radicals (reactive oxygen species) in cells and the body's ability to neutralize them. It arises when free radicals outnumber the mechanisms that remove them. This is a scientific concept describing a biochemical process, not a diagnosis or a disease.
Free radicals form naturally, among other things during cellular respiration and metabolic reactions. It is only their excess, resulting for example from environmental pollution, UV radiation or a highly processed diet, that disturbs this balance.
What are antioxidants and where do they come from?
Antioxidants are chemical compounds that neutralize excess free radicals. You'll find them in many foods, including vitamins A, C and E, minerals such as zinc or selenium, and carotenoids and polyphenols present in vegetables, fruit and mushrooms.
This is a biochemical fact about how these compounds act in the body at cellular level, described in scientific literature. It is not a promise that a given product will "remove" oxidative stress or reverse its effects.
What antioxidant compounds occur in functional mushrooms?
Functional mushrooms contain a variety of compounds with antioxidant properties in their fruiting bodies, including polyphenols, ergothioneine, selenium and polysaccharides such as beta-glucans. Coriolus (Trametes versicolor), also known as turkey tail, is one of the species most studied for its antioxidant compound content.
