Ceremonial cacao is whole cacao beans ground with all their natural fat, cacao butter, with no defatting and no alkalizing. It is a different raw material than the regular cocoa powder from the supermarket shelf, not the same thing under a different name.
Ceremonial cacao is the whole bean ground together with its fat, cacao butter, which can make up to about 50% of it. Regular cocoa powder from the shop is defatted: the cacao butter is pressed out, and what remains is a dry, lean residue, often alkalized as well for a milder taste and darker colour.
Our ceremonial cacao comes as cacao paste ground into small pellets, not a bar to chip away at or a dry powder from defatted beans. The pellets are easy to measure with a spoon and dissolve more easily in a warm drink.
