Fruiting body vs mycelium. What's the difference
The fruiting body is the part of the mushroom that actually grows above the substrate and is traditionally eaten, while mycelium is the underground web of threads that some producers grow on grain and dry together with it. Extracts made from pure fruiting body usually have higher and better-documented beta-glucan content, because they aren't diluted with starch from the grain substrate. This doesn't mean a mycelium-based product is "bad" · it means you're evaluating it under different conditions, and the label should say so clearly.

"30% polysaccharides" on a label is not the same as "30% beta-glucans" · polysaccharides are a broad category that also includes starch, while beta-glucans are the compounds characteristic of functional mushrooms and the subject of most research. The testing method determines how reliable the number is: the Megazyme method (enzymatic, industry standard) and HPLC (chromatography) give comparable, repeatable results; a plain "colorimetric test for total polysaccharides" inflates the result, because it doesn't distinguish beta-glucans from starch.
